Sweet Potato Protein Muffins
If you like to bake your own healthy snacks, you’ll want to try these sweet potato protein muffins.
5 ingredients, 5 minutes of preparation and 20 minutes in the oven. Easy!

How To Make Sweet Potato Protein Muffins
Ingredients (for about 12 mini muffins or 6 medium size muffins)
300g/1 medium sweet potato
A splash of water
Optional: Prozis Yummy Drops (vanilla flavour) or any sweetener
First, cook the sweet potato then mash it with a fork.
In a large bowl, mix the sweet potato, flour, egg and protein powder together.
Add some water. You want to get a “not too thick but not too smooth” mixture.
I’ve added a few Yummy drops to give my muffins a sweet vanilla flavour. But you can also add a spoon of coconut sugar or some pure vanilla extract.
Fill the muffin cups (nearly fully) and bake for 15 to 20min at 200°.
