Sweet Potato Protein Muffins

How To Make Sweet Potato Protein Muffins

For this recipe I am using some Prozis products. I am in a partnership with Prozis, however I only recommend the products I truly like and use.

Ingredients (for about 12 mini muffins or 6 medium size muffins)


First, cook the sweet potato then mash it with a fork.
In a large bowl, mix the sweet potato, flour, egg and protein powder together.
Add some water. You want to get a “not too thick but not too smooth” mixture.
I’ve added a few Yummy drops to give my muffins a sweet vanilla flavour. But you can also add a spoon of coconut sugar or some pure vanilla extract.
Fill the muffin cups (nearly fully) and bake for 15 to 20min at 200°.
